Me and a friend (lets call her A) decided to take on the daunting task of making Dosas. Looking back, if we had planned it better it would have taken us just a little while. I have tried to simplify this as much as possible. Here is what you will need:
For the Crepe/Pancake like thing called the Dosa:
1. 1/2 cup of Urad/Urid Dal (its a type of gram easily available at any Indian grocery store)
2. 1.5 cups of rice flour
3. Pinch of salt
Soak the sabut overnight. Blend it with water and add rice flour to the blended mixture and then add salt. The consistency should be something like a thin smoothie - easy to spread. Take a stick of butter and grease a pan with it very lightly. Use a thin, wide and non-stick pan. Spread it like a pancake till its crisp and remove and stuff it with the things below.
For the stuffing:
1. 1/2 a large onion sliced thinly
2. 3 big potatoes
3. 1 tsp turmeric powder
4. 1 tsp chili powder
5. 1 tsp cumin powder
6. 1 tsp coriander powder
7. Salt to taste
Add curry leaves to hot oil. Add onion and caramelize them. Add in boiled potatoes and mash them with spices. Cook till spices are well absorbed. The stuff the crepe/pancakes with the potatoes and enjoy. This should take sometime to cook but once you get the hang of it and more importantly - once you keep the mixes ready you will love making this dish. Its light and healthy. Perfect for a brunch or a leisurely lunch.
To me, love is a good home cooked meal with people you love. Nothing extravagant! A sandwich or a crepe or curry. Nothing comes close to something you can cook up in less than 30 minutes. That is what I am going to try to share here. Leave me a message if you try something!

Sneak Peek!
I am having friends over at my house tomorrow and this is what I am going to be making.
The recipe and the results of my endeavour will be available to everyone tomorrow. Its a delicious rice and lentils crepe that has an even more delicious stuffing. It is meant to be eaten with a lentil soup (for lack of a better way to describe it) and a coconut chutney. I am making three different kinds of stuffing and am so so so excited about it.
P.S - I am also having friends over tonight. I am sleeping with my chefs hat on tonight.
